HEAD CHEF – DOG & DUCK – WOKINGHAM – NEW OPENING -

Brakspear are opening a brand new bar and restaurant in Wokingham, Berkshire and are looking for an experienced Head Chef. You will have new opening experience, a proven track record for building sales year on year and converting to profit. The site is due to open at the beginning of October – you will join the business mid September for training and to recruit your team.

You will have experience of working within a branded environment but with the business knowledge and drive to take your own business decisions, delivering consistent quality, excellent customer service and on-going menu development.

Considered a key member of the management team within our managed division, the Head Chef is committed to assisting the General Manager to drive the business through consistent quality and on-going menu development.

What we offer:

As well as a competitive salary of up to £35 000, pension and 28 days holiday, by maintaining your stock levels, food GP and running a compliant kitchen you have the potential to earn a further £10 000 in bonus. This position also has the possibility to live in.

Whilst you are working you can eat a meal from the menu at the discounted rate of 70% and during your free time you and 3 friends can eat in any of our nine sites for 50% off. In order to be a successful Head Chef

A passion for simple, well executed food is a given. You will already be confident in managing and building a kitchen brigade that works in harmony with the team front of house, training and recruiting team members and supporting them to strive to be the best at what they do.

You will need to have the ability to motivate the team to produce consistently great food as well as the ability to manage health and safety, cleaning and food hygiene.

Expect to manage costings, margin and labour costs within the kitchen using the latest on line systems, so you need to be computer savvy
