Sous Chef

Reporting to the Head Chef

The role involves:

  • Running of the kitchen on a day to day basis in the absence of the Head Chef
  • Lead & inspire the brigade to ensure the kitchen runs smoothly at all times
  • Help to develop and train the junior chefs
  • Ensure consistency of produce throughout the kitchen
  • Supervise service ensuring the cooking and presentation of food is compliant with company standards
  • Support the Head Chef to ensure targets are met with labour and food costs
  • Systems compliance company and legal –HCCAP, Allergen updates, COSHH & SFBB
  • Contributing to menu development sessions with the Head Chef

Qualifications

Preferably a NVQ level 3 or equivalent in Cooking

Food Hygiene level 3 or above

  • Able to work effectively as part of a team whilst undertaking a leadership role
  • Identify ways to improve profitability
  • Demonstrate an up to date and in depth understanding of cooking, trends & methods
  • Continually strive to achieve goals & objectives
  • Lead by example and offer clear direction to team
  • Be uncompromising in achieving company standard
  • Computer illiterate knowledge of Word, Excel and Outlook
